Evil Twin Brewing, the Denmark-based beer producer that has long eyed opening a brewery in Ridgewood, will at last open next month after more than two-and-a-half years of work.

The brewing company’s permanent location at 1616 George St. marks the first brick-and-mortar home for the company. Jeppe Jarnit-Bjergso, who founded Evil Twin in 2010, had been steadily growing the beer’s reach over the years by “gypsy brewing,” or contracting other breweries to produce Evil Twin products.

The expansive Ridgewood brewery will have an indoor bar, and a year-round greenhouse and beer garden.

In the outdoor space, Fette Sau, the popular Williamsburg restaurant, will be serving up its signature barbecue from a permanent food truck.

Jarnit-Bjergso first began brewing his own beer in Denmark, where he worked as a school teacher. Production eventually increased to the point where 10 breweries around the world were making Evil Twin beer.

Evil Twin originally planned to settle into its Ridgewood home during the fall, but had to push the opening back due to several unspecified setbacks and delays. They were last set on opening in November

“It would be unfair to our fans, family and friends to open before everything is perfect,” the brewery wrote in a Nov. 1st Facebook post. “If we can avoid any further delays we plan to start brewing test batches very soon to make sure the beer is perfect before we open.”

A few days later, Evil Twin posted a picture of their issued liquor license on their Facebook page.

The new December opening was announced at Wednesday’s Community Board 5 meeting, although no specific date was given. Board members noted that this will be the third brewery to have been established in the area’s Industrial Business Zone. The other breweries are Queens Brewery at 1539 Covert St. and Bridge and Tunnel Brewery at 15-35 Decatur St.
